Bunbury Farmers Market Inspired Granola

We spotted this crunchy mix at the Bunbury Farmers Market and had to recreate it at home! Packed with oats, nuts, coconut and a hint of sweetness, this granola is golden, crunchy and perfect over yoghurt, fruit or even as a snack straight from the jar. 🌿

Bunbury Farmers Market Inspired Granola

Golden clusters of oats, coconut, nuts and seeds, baked with honey and vanilla. The perfect crunchy topper for breakfast bowls or little foodie snacks.

What you need

  • Large mixing bowl
  • Small saucepan
  • Baking tray + baking paper

Ingredients

  • 3 cups rolled oats (GLUTEN)
  • 1 cup shredded coconut
  • Β½ cup pecans, roughly chopped
  • Β½ cup almonds, roughly chopped
  • Β½ cup hazelnuts, roughly chopped
  • Β½ cup pistachios, roughly chopped
  • Β½ cup sunflower seeds
  • Β½ cup brown sugar
  • Β½ cup honey
  • ΒΌ cup butter (or coconut oil for dairy-free)
  • 2 tbsp golden syrup
  • 1 tsp vanilla extract

Directions

Preheat oven

Heat oven to 160Β°C fan-forced and line a large baking tray with paper.

Mix the dry ingredients

In a big bowl, combine oats, coconut, nuts and seeds.

Make the syrup

In a small saucepan, gently heat brown sugar, honey, butter, golden syrup and vanilla until smooth and bubbling.

Combine & bake

Pour syrup over dry mix, stir well, spread evenly on tray and bake for 25–30 min, stirring halfway, until golden.

Cool & store

Let cool completely (it crisps as it cools), then break into clusters and store in a jar.

Storage

  • Keep in airtight container up to 3 weeks.
  • Freeze portions up to 3 months (thaw at room temp).

Allergy swaps

  • Nut-free: swap nuts for extra seeds (pumpkin, chia, sunflower).
  • Dairy-free: use coconut oil instead of butter.
  • Toddler tip: pulse nuts smaller before baking to reduce choking risk.
