  • Frypan
  • Grater

Ingredients

Rolls

  • 4 slices sandwich bread (crusts off)
  • 1 small apple, grated and squeezed of juice
  • 2 tbsp apple purée
  • 1 tsp cinnamon
  • 1 egg (or chia “egg”)
  • 1/4 cup milk of choice
  • 1 tsp vanilla
  • Butter or oil for frying

Optional Topping

  • Vanilla yoghurt (for drizzling)

Directions

Make the filling

Grate apple, squeeze out excess juice, then mix with apple purée and cinnamon.

Prepare the bread

Roll out bread slices flat. Spread a spoonful of apple mixture over each, then roll up tightly.

Dip & cook

Whisk egg, milk, and vanilla. Quickly dip rolls, then fry in a little butter over medium-low heat until golden on all sides.

Finish & serve

Slice into halves or thirds, drizzle with yoghurt, and enjoy warm.

Storage

  • Best eaten fresh.
  • Store in fridge up to 2 days, reheat in a dry pan.

Allergy swaps

  • Egg-free: dip in milk + chia mix
  • Dairy-free: use plant milk, dairy-free butter and yoghurt
Serving note: This makes 4 rolls. If you want more, simply double the apple, apple purée and cinnamon mixture.
